Based on Warren's fantastic soda pop scone recipe, add a few extras to make these delightful mini scones.

Ingredients

1 ½ tspBaking powder
4 cupsSelf raising flour
1 pinchSalt
1 cupCream
330 mlLemonade, bottle (or soda water for a less sweet dough)
200 gDates, chopped, pitted
1Orange, juice of
1Rum, or 2 capfuls
5 TbspJam, use your favourite jam or preserve

Directions

  1. To thesoda pop sconedough recipe (ingredients included above), gently fold through 200g chopped, pitted dates, the juice of 1 orange, a capful or two of rum and a few Tbsp of your favourite jam or preserve.
  2. Spoon into a greased 24-hole mini muffin pan and bake in a hot (220C) oven for 20 minutes, until golden. This will make 48 mini scones.
